Sujan Sarkar is the chef and partner of ROOH (San Francisco, Columbus and Palo Alto), BAAR BAAR (NYC, LA) and Indienne (Chicago) – all celebrated modern Indian restaurant brands in the United States. Over his decades-long career, both internationally and here in the U.S., Sarkar explores, understands and reimagines the future of Indian cuisine. He has cooked in some of the most reputed kitchens in London, Dubai and Bombay and was voted Times of India “Chef of the Year” in 2016. His latest restaurant, Indienne, was named one of Esquire Magazine‘s “Best New Restaurants in America” for 2022. Sarkar has also cooked for the James Beard Foundation, Cannes Lions Festival and other prestigious organizations around the world. Sarkar’s next project is a restaurant focused on traditional Northern Indian cuisine in NYC’s Theater District.
