Suzanne Lyon never set out to become a baker—at least not professionally. She spent the better part of her career as a talent agent at powerhouse agency WME, before going on to lead talent strategy for some of the country’s top lifestyle and wellness brands. In those roles she spent years negotiating big deals, shaping careers, and creating cultural moments. It was fast-paced, high-stakes, and endlessly exciting—until an unexpected career twist (aka a layoff) left her wondering what came next. She found her answer in the most surprising of places: her own kitchen. What began as late-night baking sessions to clear her head quickly became an obsession, then a side hustle, and before long, Heathcote Bakery was born.
Heathcote’s signature? Suzanne’s ultra-thin, crisp-edged, soft-centered chocolate chip cookies, which, according to Chef Bobby Flay, are “the next great chocolate chip cookie.” Unlike the majority of cookies these days that are overloaded with chocolate, Suzanne has always believed that the very best part of a chocolate chip cookie is the dough itself. Her cookies are designed to let the buttery, caramelized dough shine, with chocolate as the perfect supporting player rather than the whole show. Suzanne’s journey from agent to baker is about reinvention, resilience, and a belief that a truly great cookie should be nostalgic, indulgent, and just a little magical.
