Maison Premiere is rooted in the tradition of historic oyster bars and absinthe cafés, where attentive service and honest advice about daily shellfish and wines are as essential as the classic recipes behind the bar. Inspired by the grand restaurants and hotel lobbies of New York, Paris, and New Orleans, we offer a setting for late-night diners immersed in bivalves, pastis, and absinthe.

Our oyster program features over thirty varieties, sourced directly through trusted relationships with farmers. At the heart of the bar stands a custom-built absinthe fountain—an homage to the famed Olde Absinthe House in New Orleans—supporting the largest absinthe selection in the country and our celebrated service ritual.

Since its founding, Maison Premiere has strived to be both iconic and inventive. Classic cocktails are told anew with precision, while house originals echo historical styles and pair beautifully with oysters and champagne. We’ve earned acclaim for both our drink-making and our commitment to warm, purposeful hospitality.

Maison Premiere has been featured in The New York Times, Esquire, GQ, Food & Wine, Travel & Leisure, The New Yorker, and more. We were awarded the 2016 James Beard Foundation Award for Outstanding Bar Program and have appeared on the World’s and North America’s 50 Best Bars lists. In 2023, we released The Maison Premiere Almanac, nominated for a James Beard Media Award and a Tales of the Cocktail Spirited Award.
