Ashley Drum began her pastry career in Philadelphia while studying pastry arts, before moving on to work at renowned kitchens such as Per Se and The French Laundry. She joined the Jean-Georges team three years ago, first as pastry chef of Pier 17/The Fulton and now overseeing the pastry programs at abcV, abc cocina, and abc kitchen. Her journey has been shaped by curiosity and a drive to keep learning. In 2019, she trained in Paris at Pierre Hermé and later traveled to Bali to work at Room4Dessert- experiences that broadened her perspective and deepened her approach to dessert. Today, Ashley is committed to creating thoughtful desserts rooted in seasonality, letting ingredients guide the story on the plate.
